butter sub + baking

Postby Myra_K on Thu Feb 11, 2010 5:17 am

How does butter substitute bake? I have a recipe for flourless chocolate cake and I think I can sub in Splenda with no problem, but it requires 1 cup of butter... Can I bake with ICBINB?

No... it won't work. ICBINB lowers the fat content by adding water. Once it melts, your batter will just be too thin. If you baked it long enough it would probably cook, but I bet you'd have more of thick cookie than a cake. With no sugar and no fat, your cake would be very sticky on top, too... you need the sugar/fat for things to form a dry crust or to brown.
